Tandoori Vegetables

For some reason, I do not do a lot with potatoes, but I do like roasting them. Sure, I love eating them it just is not a much featured vegetable. Well, here I took a couple of things that I do not use frequently and cooked them with tandoori spices. The result was amazingly good and comforting.

Tandoori Vegetables

Serves 4

Ingredients

1 cup yogurt
2 tbsp tandoori masala
1 tbsp ginger-garlic paste
4 green chillies finely minced
10 brussel sprouts halved
15 baby potatoes peeled
10 cippolini onions peeled
salt to taste
2 tbsp oil
Lime for garnish (Optional)

Method of Preparation

1. Mix all ingredients except the oil and marinate for 2-3 hours.
2. Heat the oven to 350 F.
3. Place the vegetables in a baking dish and add the oil and bake turning occasionally for 30 minutes.
4. Enjoy alone or as a side.

Looks gorgeous.Great color of Tandoori masala too.Too many potatoes ruins the dish unless you are making something exclusively with aloo.Enjoy.

I agree, baking adds a density to the dish, somewhere in between slow cooking and frying and is a lot healtier.
